Banana Waffles

My husband always said it was love at first waffle. I have always been a lover of waffles, and if I had to choose one food for the rest of my life it would be between waffles and ice cream. So, here’s my simple waffle recipe that will always be a hit! I believe the recipe will work for pancakes as well, but who would pick pancakes over waffles?!

Banana Waffles:

1 c. Kodiak Cakes of your choice (I use gluten free, you can buy here)

1 c. Vanilla Almond Milk (you can use any milk, I just choose this one)

1 egg

1 tsp Vanilla extract 

1 banana 

This will make approximately 4 waffles.

If I’m planning ahead I make my waffle mix the night before. I feel that the mix thickens overnight and makes a better consistency for the waffles! But it’s still just as good if made first thing in the morning!

Turn on your waffle maker so it can start heating up while you make the batter!

Mix all ingredients, except bananas, in a bowl until smooth. Once the batter is smooth, chop up your banana and add it into the mixture. If you are making your batter the night before, you can save your banana and add it fresh in the morning

Spray your waffles maker with coconut oil or butter if needed. Depending on your waffle maker size, pour about a half cup of batter into the waffle maker. And that’s a wrap! Cook to your liking. 

 


A few tips:

I always double the batter mix so I get about 8 waffles.

Tip #1 - Keeping waffles warm – If you don’t want the first waffle you made to be cold by the time you make your last one, here is a little tip. Turn on your oven to the lowest degree it will go. Mine goes to 170 F. Once the oven reaches that temp, turn it off. Stick a cookie sheet in there and put the waffles in the oven as they’re ready. This will keep them warm without over cooking them. 

 

Tip #2 – Try putting jam or jelly on top of your waffles instead of syrup! It’s so yummy and adds more flavor. My favorite is raspberry jam!

 

Tip #3 – I make double the batter because I want waffles tomorrow! So, this tip is about heating them up. Microwaving waffles is eh. I cut my waffles in half and stick them in the toaster! They come out warm and just a slight little crunch. LOVE.
